Shoe Pie
This Thanksgiving we were invited to the home of some friends here in North Africa. We brought a heaping mound of mashed potatoes and a shoe pie. It is a new family tradition for us, to bring shoe pie. When I told my mom about this, she asked how it was made, and I thought I would share the recipe with you all:
-First you pre-bake your crust (I used a pre-made one, had to stretch it a bit to fit the oval dish we were substituting for a real pie pan) Don't forget to put fork holes in the crust so that it doesn't bubble up. It takes about 15 minutes in a hot oven.
-Then, after the crust has cooled a bit add the contents of two cans of cherry pie filling. (you will notice that this is not enough to actually fill the crust...)
-Borrow whip cream making supplies from a kind neighbor and whip up a double batch (to fill up the space that the cherries didn't)
-Refrigerate until it is set
-Then roughly add one child's foot, complete with shoe. Make sure it goes all the way down to the crust! ...and Voila! Shoe Pie!

Shoe Pie...sounds delightful. Is the taste at all similar to Toe Jam?
Yum...too bad you can't buy it at the store.
